2   pounds okra
	  3   tablespoons oil
	  1   tablespoon all-purpose flour
	  1   onion, chopped
	  1/2 bell pepper, chopped
	  2   ribs celery, chopped
	  5   tomatoes, chopped
	  Creole Seasoning
	  Wash okra.  Cut in 1/8  inch slices.  Fry in an aluminum pot on medium 
	  heat in 2 tablespoons oil until okra is no longer sticky. 
	  In another skillet, make a medium dark roux with 1 tablespoon oil and 
	  flour.  Add onion, bell pepper, and celery.  Simmer until tender.  Add 
	  tomatoes and simmer for 5 minutes.  Add okra, seasoned with Creole
	  Simmer for 1 hour.  
	  Yields 6 servings.
