Carrots Rapee
	
	1 pound carrots
	1 to 2 lemons
	3 tbs extra-virgin olive oil
	Salt, pepper to taste
	
	Peel the carrots and cut them into two-inch chunks and put them 
	in the food processor with the metal blade. The traditional way 
	to do this is by grating them on the largest holes of a cheese 
	grater, but this is time consuming and knuckle grating.
	
	Process for 15 to 20 seconds, or until the carrots are finely shredded 
	but not mush. Toss with freshly squeezed lemon juice, olive oil, salt and 
	pepper to taste.
