Sicilian Pasta Primavera
This spicy flavorful marinara sauce goes very well with the
nutty taste of whole grain pasta. It has lots of color, texture,
fiber and nutrients.
Pasta:
8 ounces whole wheat pasta
Sauce:
1 pound frozen Italian style vegetable medley
1 cup no-salt-added tomato sauce
1/4 cup tomato paste, no-added-salt
2 cups pasta sauce
pinch cayenne pepper
Topping:
2 Tbsp grated Parmesan cheese
Cook the pasta according to package directions. Drain and hold
until the sauce is ready.
Add all ingredients for the sauce to a large saucepan. Place over
high heat until it comes to a boil; stir and lower heat to simmer.
Cook until the vegetables are heated through and tender, about 3
to 5 minutes.
Serve the sauce over the pasta and top each serving with 1/2 tablespoon
of grated Parmesan cheese.
Optional serving suggestion: serve with a large tossed green salad.
Yield: 4 servings. Each serving (1-1/2 cups): 318 calories, 2 g fat, .5 g
saturated fat, 2 mg cholesterol, 496 mg sodium, 64 g carbohydrate, 11 g fiber,
14 g protein, 17 g sugars.
