Green Split Pea Soup

              Directions With Ingredients

          1. Wash and soak 2 cups green split peas - 1 lb package
          2. Drain peas, reserve liquid
          3. Add enough water to make 10 cups
          4. Add peas and cook covered for 2-1/2 to 3 hours with the following:
    
             Ham bone or salt pork
             1/2 cup chopped onions
             1 cup chopped celery with leaves
             1/2 cup chopped carrots
    
          5. Simmer covered for 30 minutes then add:

             1 clove garlic
             1 bay leaf
             1 tsp sugar
             Dash Cayenne - careful!!
             1/4 tsp thyme

          6. Remove pork/bone and put soup through a sieve then chill to 
		     remove fat that collects on the top of the soup
          7. To bind soup, make a roux (ROO):

      Melt 2 tbs butter or soup fat or combination of both
      Stir in until blended 2 tbs flour 

      Slowly add a little of the soup mixture and cook while stirring  until 
      boils and produces a nutty color, then stir
      into the preheated soup

      Save in separate portions and freeze.
