Split Pea Soup


Ingredients and Cooking Instructions:

Wash and soak 2 cups split peas
Drain peas, reserve liquid
Add enough peas and cook covered for 2 1/2 to 3 hours with the following:
Ham bone or salt pork
1/2 cup chopped onions
1 cup chopped celery with leaves
1/2 cup chopped carrots

Simmer covered for 30 minutes then add:

1 clove garlic
1 bay leaf
1 teaspoon sugar
dash cayenne pepper
1/4 tsp thyme
Remove pork and put soup through sieve then chill to remove fat which will form a jell cap at the top.

To bind soup: (IMPORTANT)


Melt 2 tbs butter or soup fat (I prefer butter)
Stir in until blended:
2 tbs flour
Slowly add a little of the soup mixture and cook while stirring until boils, then stir it into the rest of the reheated soup.

Serve in large shallow soup bowl with croutons or your favorite topping.
